weekend musings...

I had such an awesome time on Wednesday water skiing, however, my body is still recuperating... so I am playing Domestic Diva today so I can tackle a Maxwell Falls hike tomorrow =)





Cornfetti Salad

1can black beans, drained and rinsed

1 ear of corn, kernels sliced off

1 jalapeno, finely chopped

1/8 C red onion, finely chopped

1/4 C cilantro, chopped

1 Avocado, chopped

Juice of 1/2 a lime

1 T olive oil

1/8 tsp chipotle powder

1/8 tsp fiesta chili powder

S & P

Combine all the above ingredients and serve over rice.


Grilled Shrimp

Shrimp

Lime juice

Olive oil

Clove of garlic, minced

Chipotle powder

Fiesta chili powder

S & P

The measurements of the ingredients will depend on the amount of shrimp to be served, use your best judgement, especially with the lime juice since it will "cook" the shrimp. Marinade the shrimp for about an hour before grilling. Shrimp can be grilled on skewers or in a grill basket. Serve shrimp over rice and Cornfetti Salad, squeeze additional lime before serving.
